Keeping Kids Healthy at School.

We hope that everyone had a smooth and successful transition into the school year!

As you know, school attendance can raise illness in both children and their parents. Enforcement of the simple rules that you've already taught will prevent colds and boost immunity.

Cover your mouth. According to the CDC, the main way that illnesses like colds and flu are spread is from person to person in respiratory droplets of coughs and sneezes. This is called "droplet spread." Sometimes germs also can be spread when a person touches respiratory droplets from another person on a surface like a desk and then touches his or her own eyes, mouth or nose before washing their hands. It is known that some viruses and bacteria can live 2 hours or longer on surfaces like cafeteria tables, doorknobs, and desks.

Wash your hands. It's recommend that when you wash your hands -- with soap and warm water -- and that you wash for 15 to 20 seconds. When soap and water are not available, disposable hand wipes or gel sanitizers may be used. We prefer the Thieves line from Young Living. Thieves is is a natural anti-bacterial which comes in a spray, hand wipes, soaps, and hand sanitizer. Please call the office to learn where to purchase.

Recipe of the Month: Quinoa Salad with Cranberry & Walnut

I (Teresa) was recently introduced to Quinoa, and have since gone Quinoa Crazy! This is one of my favorite recipes, and was a hit with even my "western-style diet" friends. Check out Quinoa 101 below to learn about the nutritional benefits, and how to prepare.

Ingredients:

  • 1 cup quinoa
  • 1 cup organic* dried cranberries
  • 1/2 cup walnuts, chopped
  • 1/4 cup green onions, sliced
  • 1/4 cup balsamic vinegar
  • 1 1/2 tablespoons olive oil
  • 2 cloves garlic, minced
  • salt & pepper to taste
  • (make it your own by adding 1 cup green veggies; asparagus, broccoli, green beans, etc)

Directions:

  • Combine quinoa with 2 cups water in a medium saucepan and bring to a boil over high heat. Reduce heat to a simmer, cover, and continue cooking until all water is absorbed.
  • In a medium bowl, combine cooked quinoa, dried cranberries, walnuts, and green onions until well mixed.
  • In a small bowl, whisk the balsamic vinegar, olive oil, and garlic until well blended. Pour over the quinoa mixture.
  • Toss until well blended. Season with salt and pepper, to taste. Chill in the refrigerator for at least 30 minutes before serving

* when using choosing any dired fruit (raisins, cranberries, prunes, etc) be sure to buy organic. The drying process concentrates toxins.
