It's back to school! These cookies are a great addition to a bagged lunch, or a healthier alternative to that rush-out-the-door pop-tart.
4 c. oatmeal
2 c. brown sugar (cut in half if you want, or I prefer a 1/1 ratio of maple syrup and maple sugar.)
1 c. melted coconut oil
Combine all in large bowl and let sit over night at room temp (or at least 6 hours).
Preheat oven to 375.
Then add to oatmeal mixture:
2 large eggs, well beaten
1 tsp salt
1 tsp vanilla
1 c. organic raisins or other organic dried fruit or chocolate chips*
Drop dough by Tbsp 2 inches apart onto ungreased cookie sheets. Bake for 8-10 min. These are chewy and adaptable to all sorts of additions such as coconut, nuts, and chopped chocolate. I love to use dried pineapple, coconut and dried cherries.
* It is important to always purchase organic dried fruit as the dehydration process concentrates toxins.
